Aquilli Metzli Cooperative currently sells fresh, stone ground Masa. We aim to build a seed to
table Milpa food system in the North Coast that enables our growing Latine community to
practice our land based cultures. Our goal is a tortilla factory that will provide staple Latine
pantry items to the region: tortillas, beans, canned tomatoes and tomatillos, salsas, culinary and
medicinal herbs, corn husks, fresh vegetables, flowers etc.
Our Masa is freshly ground by stone twice a week. We cook whole dry corn kernels with water
and cooking lime (cal), and grind it fresh the next morning. Our masa is never powder. We have
three lines of Masa: Azure Standard, Masienda, and Hecho en Humboldt.
$ Azure Standard: Azure Standard provides Organic industrial corn grown in the US. Good
flavor, affordable pricing.
$$ Masienda: Masienda sources clean and ethical corn directly from Mexican farmers. Their
heirloom varieties are full flavored with a diversity that can meet the need for any Masa variant.

$$$ Hecho en Humboldt: We are working hard to make Humboldt grown Masa. Last season we
grew 1000lbs of Masa corn in Humboldt. We aim to eventually produce the majority of the corn
we process into Masa. We only use organic amendments on our farms and we never spray
anything. Because of how little we grew last season our Hecho en Humboldt line is only
available currently through the Arcata Farmers’ Market.
